Rack of Beef Ribs

If you have never seen one - here is a rack of beef ribs. There are 6 ribs here.

They are mustard coated and a thick coat of JJ's rub.

Cooking at 275 deg over the plate setter and drip pan. Going for 5 hrs

 

After 4 hours at 275 the meat has pulled back up the bone by 3/4 inch. The meat temp between the bones is 175-180 deg. It will be around 185-190 when done.

Very tender - very juicy. These beef ribs were not at all tough.

Some people have said beef ribs are a waste of time and money. They say they are tough and greasy. They are a bit more greasy - but these were not at all tough. The mustard (with the vinegar) breaks down the meat and forms a great crust -- not hint of mustard!! None at all!!
