Spare Ribs over a Plate Setter

Spare Ribs (not baby backs)

The Setup:
Large BGE
1 rack spare ribs with mustard coat and JJ's rub
Inverted Plate Setter and drip pan
350 deg dome for 2.5-3 hrs

Opening up every 45 minutes to flip and rotate. Adding a sauce for the last 1 hour.

Here they are after 3 hours at 350

They could have easily gone another half hour but dinner was ready - so we ate.

I added a little of JJ's sauce an hour ago on the outside.

 

They were very good - juicy (as you can see)

Times and temps can vary:

300 for 3.5 hr
325 for 3 hr
350 for 2.5 hr
400 for 2+ hr
These would also work over ceramic for either spare ribs or baby backs.

I used a handful of apple chips and a hickory chunk spread over the lump.
