Get the grill ready. No stones, no drip pans.
Yes - started to rain - but stopped after an hour

On goes the spare ribs. Thats JJ's rub - I should have used more. I'll go now and add more.

After 45 min - flip it over
The smell is great- trust me!!! |

I flipped the ribs and added 2 sweet potatoes. This is an experiment -- we'll see how they turn out - tonight!

A real boomer of a thunderstorm rolled through - whewwww.Bang - boom - more rain. Still cooking at 225 deg dome temp

After I flipped them over. They have been in at 225 deg for 2 hrs.

Here is something I tried. Being not much of a beer drinker - I love micro brews - I always have an old beer in the fridge. The ribs get a bit dry so I slop on a little beer - meaty side when they are up. You really don't need to do this but it gives me something to do. Didn't seem to hurt though. |

Flip them again
Ohhhh boy. I added a pat of butter to each potato and wraped it in foil. No smoke flavor at all that way. |

They smell great. 225 deg
3 hrs cooking at 210-225 deg

Adding a Strut'in sauce glaze on the meaty side. This is a personal preference - last 30 min only and I will crank it up to 250 dome temp. It's raining good now - ribs look great. 30 min to eat. Sorry about this picture - its pouring rain. |

Now, is that wonderful looking or what?
The sweet Potatoes were perfect!! I scrubbed them and added one pat of butter and folded them in tin foil. They didn't have a trace of smoke. Should work for corn too. |
BTW, I use the scissors to cut my ribs apart - just my way of doing it. |
